Recipe: Oreo and Chocolate Easter Cake


This week's recipe is all about Easter! Who is excited about Easter Holidays? I am! Last week, I visited my parents and because I won't go again for Easter, I decided to bake an Easter cake to have a little celebration with my family. 

The cake is chocolate flavoured and I added crushed oreos to the dough because everything is better with oreos! It is filled with chocolate ganache and covered in chocolate flavoured fondant. Any chocolates lovers around?


1) Preheat oven to 160º and grease the mould. I made two cakes in a 20cm / 8in mould because I wanted it to be quite high. The ingredients listed above are for one cake so if you also want it to be higher, you'll need the double of everything.
2) In a bowl mix the flour, the cocoa, the baking powder and the crushed oreo. In a different bowl, beat the butter with the sugar until well combined. Add the eggs one by one and then half of the flour mixture. Once it's well combined, add the milk (with a tablespoon of vanilla if you want) and the rest of the flour and mix well.
3) Put the dough on the mould and put it in the oven for 25-30 minutes depending on your oven. And then do it all again for the second cake.
4) Once they are done, take them out and let them cool. Meanwhile, you can do the ganache.
5) For the ganache, cut the chocolate in pieces and put the the cream to boil. Once it's boiling, pour it on the chocolate and mix well until well combined.
6) Let it cool and whip it until it has the texture desired. Then put the cakes on top of each other and cover them with the ganache.

7) For the decoration we bought chocolate flavoured fondant and decided to make a little bunny. My boyfriend was in charge of the fondant and he made the cutest bunny to go on top. We finally added some chocolate eggs and here's the result (after surviving the train to my parents' place):

The cake was a roaring success with my family and if I say so myself it was delicious! We will be making another one this week to celebrate Easter with my boyfriend's family. Can't wait for more!
